Almond Bars (Amandelkoek)
1/2 pound almond paste
2 cups flour
2 cups sugar
1 cup butter
2 eggs
1 tsp. almond flavoring
Mix together, put into a greased 9x13 inch pan and sprinkle heavily with sugar and slivered almonds (I like to use Wilton's "White Sparkling Sugar" found by the sprinkles in the baking aisle). Bake 35 minutes (until golden brown) at 350 degrees.
Almond paste is very difficult to mix. Thanks, Grace, for this great tip about shredding the almond paste with a cheese grater before mixing!
