Chicken Salad Panini

This is such a great, easy recipe that I think turns out nearly like a Bistro Sandwich!

1/4 cup mayonnaise
1-1/2 tsp honey
3/4 tsp fresh dill or 1/4tsp dried dill spice
3/4tsp dijon mustard
dash salt & pepper
1 cup cubed cooked chicken
3/4 cup shredded cheddar cheese
1/2 cup chopped peeled apple (thin slices works best)
1/4 cup chopped pecans toasted (opt)
8 slices bread

Combine first 6 ingredients in small bowl. Add the rest after the first is well mixed. Butter one side of each piece of bread. Placing butter side down on either griddle or grill (George Forman) spread mix on each slice and cover with another piece of bread (butter side up). Grill until middle is warm and outside is crisp! Yield 4

  1. I like the idea of grilling on the George Foreman for the Panini effect. Thanks, Chantelle. Do you have any suggestions for how to toast the pecans?

  2. I have toasted pecans or any nuts for that matter by baking them in the oven for 10-12 minutes at 350 degrees. It really adds to their crunch and flavor.

  3. To tell you the truth, I've never added the Pecans because the kids and I don't like them. The oven idea above sounds good though!

  4. Hey, I made this tonight. It was good. Unfortunately my children wouldn't eat it (they are very picky 2 and 4 year olds!). Fortunately that left more for me! I finished off the salad by myself on 3 pieces of toast. Yum. Thanks, again, Chantelle.

  5. glad you liked it - I enjoy this too because even if the kids won't eat it, the salad stays well for a few days in the fridge! Easy lunch for Todd and I!
