Cheese Fondue


1 garlic clove, peeled
2 cups dry white wine
1 tsp lemon juice
1 pound shredded swiss cheese
3 TBLsp flour
salt and pepper
1 or 2 loaves french bread, cut into cubes

I usually make this recipe in a saucepan on the stovetop, and then transfer it to the fondue pot after it's mixed and melted.

Rub the inside of the pot/pan with garlic. Pour in the wine and lemon juice, and bring it to almost a boil over medium heat. Then mix the cheese with the flour and add by handful to the liquid, stirring constantly, until all the cheese is melted. Season to taste, put into the fondue pot, and keep the flame low. Be sure to occasionally stir the cheese as it tends to burn on the bottom of the pot. Serve with bread.
