Blackening and Poultry Seasonings

Blackening seasoning for fish or chicken:
2 teaspoons ground paprika
4 teaspoons dried leaf thyme
2 teaspoons onion powder
2 teaspoons garlic powder
1 tablespoon granulated sugar
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon ground cayenne pepper
1 teaspoon dried leaf oregano
3/4 teaspoon ground cumin
1/2 teaspoon ground nutmeg

A recipe for an all-purpose seasoning blend for meat and vegetables:
1 teaspoon dried leaf basil, crumbled
1 teaspoon ground mace
1 teaspoon dried marjoram
1 teaspoon ground cloves
1 teaspoon dried leaf thyme, crumbled
1 teaspoon ground nutmeg
1 teaspoon leaf oregano, crumbled
1 teaspoon black pepper
1 teaspoon dried parsley flakes
1/2 teaspoon ground cayenne pepper
1 teaspoon savory

A typical blackening seasoning which can be used on meats, poultry and fish may include some or all of the following: black pepper, cayenne pepper, garlic, oregano, thyme, paprika, salt

A typical poultry seasoning may include some or all of the following spices and herbs: celery seed or salt, sage, thyme, marjoram, onion, rosemary, savory, pepper (black or red), dill, small dash of cloves
