Cheddar Chowder


2 cups water
2 cups cubed potatoes
1/2 cup diced carrots
1/2 cup diced celery
1/2 cup chopped onion
1 tsp. salt
1/4 tsp. pepper
1/4 cup butter
1/4 cup flour
2 cups milk
2 cups cheese
1 cup cubed ham

Combine the water, potatoes, carrots, celery, onion, salt and pepper; boil 10-12 minutes; add butter, flour and milk (dissolve the flour in the milk before adding). Boil until thick; add 2 cups cheese and 1 cup cubed ham. Cook until cheese melts.

This was a really great winter dish that used up some of our leftover Christmas ham. Flavors all blend really well together. Yum!
