1 cup margarine
1/2 cup crunchy peanut butter
1 lb. powdered sugar plus extra for rolling
1 cup chocolate chips, chopped (blender works well)
2 cups oatmeal
1/2 tsp. vanilla
Mix ingredients well. Roll dough into balls about the size of walnuts. Roll in powdered sugar and store in refrigerator.
I found that after a couple hours the powdered sugar was absorbed by the moisture in the balls, so before serving you may want to re-sugar the balls so they look more snowy!
