Peanut Butter Cup Cookies

1/2 cup sugar
1/2 cup butter
1/2 cup peanut butter
1/2 cup brown sugar
1 egg
1/2 tsp. vanilla
1-1/4 cup flour
3/4 tsp. baking soda
1/2 tsp. salt
1 pkg. miniature peanut butter cups (I like to use Walmart's Great Value ones found by the candy--there are 36 in that bag)

Mix together all ingredients except peanut butter cups. Roll dough into small (1 inch) balls and put in miniature muffin tins. Bake at 375 degrees for 10 minutes (less if using dark coated pans). Unwrap peanut butter cups and press one into each cookie just after they come out of oven. Do not remove from the tins first. Let cool 10 minutes, then remove from tins.

Note: as you can see, this recipe is almost identical to the following star cookie recipe. I had more dough than cups, so I used my leftover dough to make a few star cookies.
