The nice thing about "Pot-Pies" is that pretty much anything goes! And that's how things went when I quick threw this together for lunch today. So, sorry for a recipe that's not exact!
- 2 refrigerated pie crusts (the roll up kind)
- leftover turkey (I ended up with about 1-1/2 cups)
- somewhere between 1 and 3 cups of frozen mixed veggies
- about 1 cup frozen cubed hashbrowns
- 1 can cream of chicken
- 1/2 cup milk
- about 2 TBSP chopped onion
- a few dashes of parsley, salt, and pepper
Preheat oven to 425 degrees. Put pie crust in deep dish pie plate according to package directions. Warm the veggies and potatoes until no longer frozen. Mix in the rest of the ingredients. Put the top crust on and fold edges together. Make a few slits in the top and bake for 30 to 35 minutes.
