Rotel Cheese Dip


This is the other thing I'm planning on making for the party tomorrow, it's my favorite dip (my husband hates it because he can't stand the taste/smell of Rotel, so I mostly only make it when he's not around).
  • 1 lb ground beef
  • 1 can Rotel (can be found at WalMart with desired spiciness, I prefer mild because I don't handle spicy things well, and original is spicy enough to effect me)
  • 1 lb (or 2 cups) Velveeta cheese
  • 1/2 - 1 pkg plain cream cheese
Brown the ground beef, dice the cheeses, and dump in the Rotel (undrained), microwave on high, stirring occasionally, until the cheeses are melted, or put in a crockpot on high, stirring occasionally, for 1 - 2 hours. Uses about 1 entire bag of tortilla chips. I normally double this, using 2 lb ground beef, 2 cans of Rotel, 2 lb Velveeta cheese, 2 lb ground beef, and 1 pkg of cream cheese. I'm rather lazy, so I generally use a crockpot liner when I make it in the crockpot, cleanup is simply tossing the liner and wiping out the crockpot and lid.

  1. I've never made it with cream cheese. Good idea. Also, just a note, if a person does decide to microwave it, be sure that the dish is covered tightly or the cheese will burn.

  2. I've always just stopped it and stirred it every few minutes to keep the cheese from burning, and I kind of like the flavor when it gets a little crusty around the edges :)

Okay so I made this and took it to a 22nd Brithday party (we all had to bring something) I doubled the recipie, the guys there thought it was soup and were eating it that way until someone told them otherwise. I took none of it home and at church yesterday everyone at the party was asking for the recipie! It was a HUGE it. I was thrilled. I am excited to make more. I also used the liner way easy clean up.
