Tonight we had a quiche that I had made up earlier and put in the freezer. All I had to do was thaw it, bake it, and eat it. I love making things ahead of time and stashing them in the freezer!
- 1 c. diced ham
- 3/4 c. diced broccoli florets
- 1/4 c. diced onion
- 1 3/4 c. milk
- 4 large eggs
- 1/2 c. flour
- 2 tsp. baking powder
- 1 c. cheese (I used a mix of sharp cheddar and colby/monterey jack) - save for later
When it's time to eat: Thaw completely, either in the refrigerator or microwave. Shake the bag to be sure that the ingredients are well distributed. Pour into a greased deep dish pie plate or quiche pan. (I used a stoneware deep dish baker.)
Bake at 350 degrees for about 30 minutes (until middle of quiche is fairly well set). Sprinkle with cheese, then bake for 5-10 minutes more, until the cheese is melted. Cool for 5-10 minutes before cutting and eating.
The great thing about this recipe is that it is so versatile. The ham can be replaced with any meat of your choice, as long as it is fully cooked before it is put into quiche. Also, the broccoli can be replaced with any vegetable of your choice. And as for the cheese, you can use whatever you have on hand.
I've never made quiche before--how do I know when the middle is well set? (beginner in the kitchen here :) )
ReplyDeleteWhen a quiche bakes, it firms up beginning at the outside edges and then moving toward the center. If you look at it part way through the baking time, you'll notice that the edges will be matte in appearance and look like they have firmed up while the center still looks quite glossy and liquid. If you slightly shake the pan, the edges will remain in place while the center still jiggles.
ReplyDeleteSo the center is well set when it looks like it has firmed up (like the edges) and has lost that liquid/glossy appearance. To double check, you can insert a knife near the center of the quiche, and it should come out almost completely clean.
I never know what to do with my leftover ham. This is a great idea. Thanks, Sandy!
