I don't have a picture, but these make a great snack or appetizer. I made them for a New Year's Eve party.
8 slices bacon (or real bacon bits)
½ can (10 oz) Rotel (tomatoes and mild chilies)
½ onion chopped
3 oz shredded Swiss cheese
½ cup mayo
1 tsp dried basil
1- 16 oz can refrigerated buttermilk biscuit dough
Preheat oven to 375 degrees. Lightly grease a mini muffin pan.
Cook bacon. Drain and crumble into a medium bowl. Mix with tomato, onion, cheese, mayo, and basil. Separate biscuits into halves horizontally. Press each half into muffin tin. Fill with bacon mixture. Bake for 10-12 minutes. Can be baked and rewarmed.

Oooh... that does look good, and very common ingredients. Are you supposed to drain the juice off the Rotel or leave it? Thanks for sharing, Wendi!
