Chewy Butterscotch Bars


This is my personal favorite pan of bars. And every time I bring it to church the whole pan gets cleaned up... no leftovers!
  • 1 cup butterscotch chips
  • 1/2 cup margarine
Melt and stir constantly (if using microwave, use medium power... this process seems to take a long time in the microwave because the butterscotch chips don't melt very fast). Once melted let cool until it is lukewarm, then add:
  • 1-1/2 cups flour
  • 2/3 cup firmly packed brown sugar
  • 1 tsp salt
  • 1 tsp vanilla flavoring
  • 2 unbeaten eggs
  • 1 tsp baking powder
Stir all these ingredients together well. Then fold into the mixture (with about 5 strokes)
  • 2 cups mini marshmallows
  • 1 cup chocolate chips
  • 1 cup chopped walnuts (optional)


Spread into a greased jelly-roll pan (10x15") and bake at 325 degrees for 20-25 minutes. Be careful not to overbake this recipe... the center should be somewhat wiggly when removed from the oven.

You can cut this recipe in half. A couple things to keep in mind: use a 9x9" pan or larger (they don't get baked through if you use anything smaller) and keep the baking powder at 1 tsp even if you are cutting everything else in half.
