Western Omelet Casserole - crockpot recipe

32 oz frozen hash browns - cubed kind
1 med onion (you can buy the potatoes and onions and even peppers all in the same bag at Meijer and Aldi)
1 lb cooked ham - diced (you can buy this already in cubes also)
1 1/2 c cheddar cheese
12 eggs
1 c milk
1 tsp salt
1 tsp pepper

Layer 1/3 each potatoes, onion, ham, cheese. Repeat 2 times. Beat eggs, milk, salt & pepper. Pour over top. Cover and cook in crockpot on low 6-8 hours or on high 4 hours.

  2. It does make a lot. I've never tried cutting it in half but I'm sure you could and maybe not cook it as long? Leftovers are good. Just if you cook it too long the edges get dark brown. So it depends if you like that part or not (that's usually what ends up being left when I've made it).
